Blood Sugar Balancing Kale & Jewel Yam Crustless Quiche
I created this easy gem about a year ago, and I have to say, the blood sugar balancing properties of this yummy breakfast are second to none. It is a weekly staple for me now- leaves you feeling balanced, grounded and satiated for hours. ~ Lara, updated January 4, 2016
1 bunch kale chopped, stem removed (7-8 leaves)
(can also use collard greens)
1 medium Jewel Yam, peeled
1/2 can unsweetened coconut milk
1/2 can diced tomatoes with green chilies
1/2 red onion chopped
2 cloves garlic chopped
1/4 tsp red pepper flakes
1 tsp baking powder
1 tbsp coconut or olive oil
Sea salt and black pepper to taste
Sauté, onions and garlic in oil until soft. Add kale and continue to sauté until kale shrinks and softens. Slice jewel yam and line the bottom of an oiled quiche dish with them. Add kale mix on top.
In a bowl use mixer to combine coconut milk, eggs, diced tomatoes, red pepper, baking powder, salt & black pepper. Add to top of kale/yams.
Bake uncovered at 350° for 50 minutes. Enjoy!
